I often get asked for healthy snack ideas and the take away is that people want more options than fruit and nuts, the healthiest foods you can grab on the go. Who doesn’t love these wonderful wholefoods and it’s great that people are moving away from processed prepackaged convenience that only lead to weight gain and deplete energy, but variety is the spice of life and snacking is no different. After all, we need to keep food exciting to stay motivated with healthy habits. I usually recommend homemade humus and cruditĂ©, but if you are a self confessed dipaholic (like me!) then chick peas alone simply aren’t enough. This brings me to this easy black bean & walnut combo, that is complimented by the addition of fresh parsley. And garlic, of course 🙂
My recipe provides a great combination of lean protein, filling fiber, complex carbs, vitamin K and omega 3, which increase metabolism, improve digestion, stabilize blood sugar, support bones and protect against heart disease. All in a homemade dip!

Ingredients (serves 6):
Simply blend;
1 15oz can of black beans
1/2 cup walnuts
3 tbsp extra virgin olive oil
2 tbsp lime juice
2 garlic cloves
1/2 tsp cumin
1/2 tsp chili flakes
1/4 tsp salt
Handful of fresh parsley leaves
